I seem to remember a Certain Dragon lady that always pays for her food with 1 gold coin and takes an ENTIRE large pot of food with her, every time she comes to the restaurant.
I`m gonna be honest with you, depending on the quality of her Gold Coins - he can re-sell them in his own world for a really big amount :D

If you love this series, try isekai izakaya. Same concept of restaurant in another world, but without the magic door and otherworldly beings.
hmmm I think it's a bit different... Isekai Shokudou is more about it's character, how they encounter THE door and Izakaya one is more about the food less about the people. Plus Shokudou's door teleports around the Isekai while Izakaya only in that town so Shokudou got waaay more colorful customer... like a lizardmen dining with a fucking prince. I think that's what made me love it so much. The colorfulness of it, despite all their differences they can eat together and not be on each other's throat
oh also the way that they call each other with their favorite food is... something else. I THINK IT JUST GIVES ME SECRET PLACE WHICH ONLY US KNOW KIND OF VIBES AND DAMN I LOVE IT
In Isekai Izakaya the are a few restaurant, Nobu isn't the only one in that world. There are manga which tells the stories of the other izakayas. and every izakaya are in different countries.
From a perspective, he doesn't need to open for earth's customers as the other world's customers pay by silver and coppers which I think is probably sufficient enough to maintain his business based on the regulars??? Just a thought
at episode one S1, his restaurant was jammed with Humans from earth :P

But sometimes it is tough as seen in the meat day episode and he seems to be slowly getting more customers.
He's friends with the bakery guy so he probably gets bread for free and also the deserts at a discount. I don't know about the water since they said it was a special kind or something but it might just be basic tap.

I worked in a restaurant before. We make preparations after closing the restaurant and before the shop opens. Like what we see in the anime when Aletta first entered the restaurant, she ate all of the corn soup or something that the master prepared.
But yeah if the costumers arrive continuously, one chef cant handle it all.

He also keeps the business going without any proper funding, the otherword's money is almost meaningless to him. Which means he is essentially giving meals away for free, budgeted on a small out of the way restaurant, which is not even open each day of the week.
Some of the money from there he uses to pay Aleta (yen doesn't cut it on that world) and buy supplies from his merchant diner. The balance, he sells as precious metals back in japan.
It's not said, but it's implied that he keeps the gold coins
Appreantly the LN this is based on has way more world building regarding the customers, how they spend their lives and how the restaurant works.
From what I hear he pawns the money from the other world off to a guy dealing precious metals or antiques or smth. The fence knows of the other world (just like the baker he gets the cakes from). The price he gets for the coins is fair. I'd assume same goes for the pricing he makes for the customers. Fair but not running down his business.
I don't see where it's implied that he just collects all the other world money.

The reason for this can be threefold:
- A simple oversight. The bulk of his earnings will be in silver and bronze anyway not gold.
- Gold has a high value so it's likely to be part of a seperated transaction where higher sums can be moved.
- Since gold has a high value in itself and can present a relatively stable investment it's feasable he'd collect and store just the gold, yeah.

Every week he sells one large pot of curry to the red dragon for 1 gold coin. That alone can cover a lot of operating costs and it doesn't look like he need to pay the rent for the shop.
especially in our world the cost of such a gold coin would be more than enough to cover costs. An ounce of gold is like about $2000 USD, so 3-4 gold pieces a month can be more than enough to cover the costs
It's normal for restaurants to close up for one or two days a week. The only thing that's standing out about this restaurant is that it's closed on saturday. Generally that's one of the busier days of the week with some excpetions where the location dictates a lot of traffic from company workers.
Then again he's not actually closing on that day, the door opens from another world.
There's nothing that'd indicate that he's selling his meals at a loss. From what I hear (second hand) about how the restaurant works this seems to contradict the principles of how it works. E.g. appearantly the resaurant banned a halfling that ate a huge amount but had no intention of paying up. When someone gets banned they get ejected from the restaurant (by the same) and cannot touch the door themselves anymore. Hence they can not enter the out of their own voliation anymore.
This indicates that the restaurant is aware of how sensibly it's run, since the only thing going wrong in the above is the monetary exchange. If the chef started to run the business into the ground it's reasonable to expect the restaurant will stop giving the chef access to the customers.

Ikr I'm working at restaurant and it impossible to run the restaurant without any kitchen crew even if they're only orderings the usual dish as every dish need a couple of minutes to prepare them so it's impossible to prepare them right on time so it's a surprise that his customer doesn't even complaining about the dish being slow or something
That's how we insert an "Anime Logic" . First, Master is actually "Build Different than a Normal Chef" thanks to his Grandma's Hero Genes. Master also got 6 days "Prep Time" before Isekai restaurant opens. Master is a True Thoughtful Chef and Advance Thinker, he knows his Patrons and Costumers food preference so he just simply light them up, cook and serve. Buffet is another example of a food had been prepared, cook in advance and serve.
